Summary: The experimental and practical research on determining
ways to improve the apparatuses of heat treatment of meat
products, in particular for the development of a modern apparatus (portable, mobile, and easy to operate) designed for
low-temperature processing of meat delicacies was performed
at the scientific and educational center “Newest biotechnology and equipment for the production of food products with
high wellness properties” at the State Biotechnological University (Ukraine).
